Welcome to our Raw Vegan Blog! Your new home for all of our AMAZING RAW FOOD GOODNESS! We’re showing everyone how delicious Raw Food can be. Making it’s debut, we’ve decided to start with a Classic- PUMPKIN PIE!Now to be fair, we’ve been on a pumpkin kick since we’ve been back from Peru, and this was an obvious choice for creating as soon as we got home! Not to mention it’s Bryson’s favorite dessert and I love making him all the foods he’s grown to love throughout the years Raw-Veganized!
As a motivation to create a decadent dessert that would deliver on flavor as well as health benefits, we used only the freshest ingredients and refrained from incorporating store bought pumpkin puree or pumpkin pie mix. Anything from the can we try to stay away from. Canned foods could be risky from the processing, sealing, and heating that takes place. Not to mention the “freshness” of contents is absolutely compromised.
This was A-OK with us though, we bought a BIG OL’ CARVING PUMPKIN last week for $3 (word!) and had a field day carving it.. into pieces! These we used to create our very own Pumpkin Purée that is used in a lot of the pumpkin recipes we had developed over the last few weeks.
We weren’t sure how a carving pumpkin would translate into elevated dishes, let alone one of the most famous desserts known to man! But let us tell you, IT HAS BEEN PERFECT! And quite abundant. We’ve had the pumpkin pieces last us for almost two weeks and they have been utilized in over 14 different dishes! How exciting is that! Exactly what we LOVE to do!
When Minimalism comes in handy..
As minimalist and Yoga Practitioners (and Teachers), we strive to subscribe to “Non-excess” in all aspects of our lives. We’ve got clothing limited to only practical and functional pieces. We keep our overhead low on personal bills and spending. We honor and relish in what we accumulate differently by not overdoing it wherever we can.
(Only Exception is eating. We are guilty of devouring- in excess sometimes- every single recipe you see here. But can you blame us?)
So taking advantage of this Non-excess principal, we make a little go a LONG way and we’re proud of it!
Most of us are looking for ways to stretch our wallets, budgets, and ingredients to go the extra mile. Buying a carving pumpkin and utilizing it for desserts, snacks, smoothies, and meals is the epitome of that practice. And we’re thrilled to share our results with you!
For these recipes, a part from the fresh carving pumpkin, some other ingredients are necessary that we find are easiest to purchase in bulk from Amazon or have in the pantry a head of time. Staying Stocked is Important!
We love Terrasoul Superfoods– we stay stocked up on their Maca and Ashwagandha Powders to add to smoothies in the morning too! (YAY SUPERFOODS YAY!) Additionally, dates are definitely a MUST-HAVE for Raw Vegans (or healthy foodies) everywhere! We like to purchase Amazing Coachella Organic Medjool Dates, 2 Pounds because they last us a while and are some of the MOST delicious dates we’ve found to date! (Pun Intended…ha!)
Coconut Flakes are one last pantry ingredient you can have on hand that will be useful for this recipe. Terrasoul with ‘anotha one’ showin’ up with a full *Organic Pound of ‘em on the low low… just the way we like it! We love getting pantry foods delivered to our door with all the work we do. It makes it so easy to meal plan and leaves our shopping for just the freshies that we find at the farmer’s market on the weekends. (Or ALDI we love their deals too! Looks like they’ll deliver it all to your doorstep.. how neat is that!)
So now that you’re all stocked up and ready to PARTY, let’s get down to business and dish out the know on how to create a NO-BAKE HEALTHY PUMPKIN PIE to slice up on your own!
We can’t guarantee that it’ll be something long lasting after you make it, merely because it’s just TOO DELICIOUS and CREAMY to refrain from eating over and over and over again. (Good thing Thanksgiving isn’t for another few weeks so you can spend the whole month practicing this one! 😉

No-Bake Healthy Pumpkin Pie
A completely Raw Vegan take on a Holiday Classic that's even more delectable than the original.

Ingredients
- Base
- 1/2 cup Walnuts
- 1/2 cup Medjool Dates
- 2 Tbsp Coconut Flake
- 1/4 cup Oat Flour Filling
- 1/2 cup Cashews (Soaked)
- 2 Tbsp Coconut Sugar
- 2 Tsp Pumpkin Spice Seasoning 🎃
- 1 Tbsp Nut Milk
- 1 1/4 cup Pumpkin Purée
- 1/4 Tsp Vanilla Extract
- 1/4 cup Medjool Dates
Directions
- Create base by adding to food processor and blending until smooth.
- Place filling ingredients into High Speed Blender and blend until smooth.
- Line pie tray or glass pan with parchment paper. (To remove pie easily when ready).
- Pack Base mixture into pie tray or pan to create bottom base layer.
- Pour filling atop base. Put into freezer and let set 4-6 hours. Thaw before serving.
