The food we’ve loved growing up has finally been elevated into a Raw Vegan Classic with an assist by our friendly Jack-O-Latern! Do you ever just crave creamy and need something to satisfy that packs on flavor as well as health benefits? Our Raw Vegan Pumpkin Mac N Cheeze is the bees-knees for anyone looking for a Fully Raw substitute to the traditional pasta pick.

We’re ALL about taking the usual and transforming it into a Raw Vegan Delicacy.


It can be difficult to let go of the foods our brains have been hardwired to love. Our focus in the kitchen is to minimize the missing out and retrain our bodies to be satisfied by something more. Raw pasta is a territory that yields limitless possibilities with the use of a handy dandy Spiralizer (this one is awesome). We just got one last week and we have no clue how we’ve ever existed before without one!


If you’re craving noodles on the quick, using a cheese grater instead is an easy way to make some veggie shreds that’ll do the trick! While traveling we used one to shred carrots, zucchini, and cucumber- making perfect little pasta pieces to accompany any sauce. But if you have the flexibility, we HIGHLY recommend a Spiralizer! It will turn the WOW factor up on any Raw Vegan Pasta dish. It takes regular vegetables and turns them into little spiral masterpieces- each perfect for smothering in your favorite sauce or tossing around in a salad!

Since we’ve been back, we’ve been spiralizing non-stop! It’s been the perfect compliment to some of the sauces we’ve come up with for this Fall. One in particular that was inspired by our Pumpkin Passion Infatuation was this PUMPKIN MAC N CHEEZE. Bryson loves cream sauces and it’s been a necessity to develop some dishes that would deliver for him! (Why? Because I love him and he deserves to eat like a King… Just like every one of you do too!)

Transitioning to Raw Vegan we gave up bread, rice, and pasta- but that doesn’t mean we’ve had to give up SAVORY or SATISFYING foods! On the contrary! We’re even more satisfied and our palates satiated by the Raw versions of dishes like this one because of all the Health and Intention that goes into them.With ingredients that are healing and nourishing, we feel replenished and energized after eating even the biggest bowls of pasta! (Not the usual when it comes to the flour or wheat stuff.. and thats okay! Just time to give your body something new and fulfilling in the right way.)


It’s so interesting how ordinary ingredients like Cashews and Pumpkin can evolve so delectably with just the right combination of flavor injecting. Spices turn up for sauce making in the Raw World… and we all know SAUZ IS BOSS when it comes to Raw Vegan Cuisine. The right sauce is EVERYTHING for a dish… and this one’s one of those sauces. We even used it on Pizza, Raw Hot Dogs, and Raw Veggie Burgers! Too Legit to Resist! Tasting like Savory, Spice, and Creamy Delight! Add some Spiralized Noodles and you’ll be feeling just right… and not a blue macaroni box in sight.😎

Pumpkin Mac 'N Cheeze

A Delicious Raw Vegan Cheese Sauce Perfect for Any Pasta Any Time of Year!

Ingredients

  • 1/2 cup Cashews
  • 2 1/2 Tbsp Extra Virgin Olive Oil
  • 2 Shallots (diced)
  • 3 Cloves Garlic
  • 2 Tbsp Coconut Aminos
  • 1 cup Pumpkin (diced)
  • 1 Tsp Smoked Paprika
  • 1 Tsp Dried Basil
  • 1/2 Tsp Turmeric
  • 1 Tbsp Vinegar
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1 Tsp Yellow Mustard Powder
  • 2 Tbsp Water
  • Zoodles (Spiralized Zucchini Noodles to Pour Sauce Over)

Directions

  1. Make Zoodles and set aside.
  2. Add ingredients to high speed blender and blend until creamy.
  3. Run in blender on high to warm sauce. (Optional)
  4. Pour over Zoodles and garnish with scallions or other fresh green.
