Our Raw Vegan No Bake Pumpkin Samoa Cookies are an amazing treat to replace any Girl-Scout cookie craving! These were made to satisfy a sweet tooth and cozy up for Fall. We’re still feeling pumpkin-inspired and know that there’s no better way to indulge than with a dessert. This cookie is sure to be your new favorite Fall addition!
Bryson loves cookies and sweets. We love how wide the range for delicious desserts is with Raw Food! Mostly because of all the health benefits that go along with eating treats that are seriously satisfying. Our favorite past time is coming up with ways to take traditional recipes and make them Raw Vegan. It was obvious that we were overdue for a good Girl-Scout cookie rendition.
Our pumpkin infatuation hasn’t started to wane just yet, though it will be soon we’re sure! So while we’re still feeling tingly with Fall EVERYTHANG, we’re making the most out of it with this seriously delectable recipe. The fact that they’re no bake is even better! We totally love desserts that are fridge friendly and easy to create.

We know that they’ll be just as easy for you to make and even easier to devour! Hopefully you’ve got a few taste testers around… or maybe you’ll just have to do all the testing and tasting yourself! (Which wouldn’t be a bad thing) Just as much as a traditional box of Samoas is to down, these deliver and then some. Especially with the health content, as raw pumpkin is filled with nutrients and vitamins. We’ve made sure that making your own Raw Vegan Pumpkin Puree is just as simple and it works perfectly with the flavors in this recipe!

Raw Vegan No Bake Pumpkin Samoas
Ingredients
Cookie
- 1/2 cup Shredded Coconut
- 1/2 cup Walnuts soaked
- 1/2 Tbsp Maple Syrup
- 1 3/4 Tbsp Coconut Oil
- 1/2 Tsp of Salt
Filling
- 2 Tbsp Coconut Oil
- 2 Tbsp Water
- 4 Medjool Dates
- Pinch of Salt
- 1/2 cup Coconut Shreds
- 1/4 cup Pumpkin Purée
Raw Chocolate Sauce
- 3 Tbsp Cacao
- 4 Tbsp Coconut Oil
- 2 Tsp Maple Syrup
Instructions
Cookie

Mix Shredded Coconut into a Powder

Add Walnuts to food processor
-
Add remaining ingredients to food processor and mix until batter is consistent

Form each individual cookie and place into freezer until they set (1-2 hours)
Filling
-
Mix all ingredients in Blender
Raw Chocolate Sauce
-
Mix with spoon and leave at room temperature with a cover
Assembly
-
Pour some Chocolate Sauce in center of cookie and set in freezer for 15 minutes

After Chocolate Sauce sets, add filling atop the cookie base and place in freezer for 30 minutes

Take cookies out of freezer and drizzle with Chocolate Sauce to finish
