This time of year calls for some soothing and there’s nothing better than Healthy Raw Vegan Ramen Soup to do the trick! The weather and holiday chaos makes us crave some warmth. Comfort comes easy with a bowl of this soup. We’re happy to share such a cozy recipe with you!
Raw Food doesn’t always lack warmth. In fact, with a few tricks you can achieve a warming sensation with any dish. For starters, a high speed blender comes in handy to generate heat with many sauces and soups. And this you’ll see with this recipe. We love to use our Vitamix for this!
There’s also the dehydrator. This is unit that will heat foods at a very low temperature. It removes liquid and leaves food warm once it’s done. And that’s something we love to use when we’re wanting vegetables warm and soft! We really appreciate these hacks and what they offer a Raw Food Diet.
Marinating to Perfection
This soup is great too because it also utilizes marinating. Marinating is another useful tool for Raw Foodists. If you want your foods to be softer and more savory or flavor packed, this trick is a go to! We love marinating mushrooms and onions because it amplifies their flavor and softens their texture.
Mushrooms add umami. So when you’re replacing meat-like feelings and flavors, these are a necessity. They flavor burst with each bite, especially after being marinated in Coconut Aminos. This is a must have ingredient that will mirror what soy sauce does and create savory flavor profiles in many dishes.
We created this soup after seeing many beautiful ramen dishes and we felt that us Raw Vegans needed our own healthier variation of the classic. We often find ourselves craving foods that traditional foodies love too. This is where a lot of our inspiration comes from. Raw Vegan Healthy Ramen Soup
Comfort comes easy with a bowl of this healthy Asian inspired classic made Raw Vegan. This is a low fat Raw Food Ramen Soup that is healing, nourishing, and cozy!
Ingredients
- 1 Zucchini Spiralized
- 6 Portobello Mushrooms Sliced
- 1/4 White Onion Sliced
- 2 Tbsp Minced Garlic Soaked in Extra Virgin Olive Oil Overnight
- 3 Tbsp Coconut Aminos
- 1 1/2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Maple Syrup
- 1 Tsp Salt
- 1/2 Lime Juiced
- Cilantro Garnish
Instructions

Slice mushrooms and White Onion into thin pieces and add to container.

Spiralize Zucchini into zoodles.

Add all ingredients into container and marinade in refrigerator overnight or for 4-5 hours.

Strain vegetables and add to bowl to separate from broth.

Add broth to high speed blender and blend on highest setting for approximately 1 minute (or until heated to desired temperature).

Pour warm broth over vegetables and garnish to serve.
Recipe Notes
*For additional warmth, add separated vegetables to dehydrator sheet and dehydrate to desired temperature before combining with warmed broth.
