Raw Vegan Healthy Ramen Soup

Ingredients

  • 1 Zucchini Spiralized
  • 6 Portobello Mushrooms Sliced
  • 1/4 White Onion Sliced
  • 2 Tbsp Minced Garlic Soaked in Extra Virgin Olive Oil Overnight
  • 3 Tbsp Coconut Aminos
  • 1 1/2 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp Maple Syrup
  • 1 Tsp Salt
  • 1/2 Lime Juiced
  • Cilantro Garnish

Instructions

  1. Slice mushrooms and White Onion into thin pieces and add to container.
  2. Spiralize Zucchini into zoodles.
  3. Add all ingredients into container and marinade in refrigerator overnight or for 4-5 hours.

  4. Strain vegetables and add to bowl to separate from broth.

  5. Add broth to high speed blender and blend on highest setting for approximately 1 minute (or until heated to desired temperature).

  6. Pour warm broth over vegetables and garnish to serve.

Recipe Notes

*For additional warmth, add separated vegetables to dehydrator sheet and dehydrate to desired temperature before combining with warmed broth.
