Ingredients

Pumpkin Alfredo Sauce

  • 1/8 cup Pine Nuts Soaked
  • 1/4 cup Pumpkin
  • 1 Tbsp Scallion
  • 1 Tbsp Apple Cider Vinegar
  • 1/2 Tsp Nutmeg
  • 3 Small Cloves Garlic
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • Splash Coconut Water
  • 1 Tsp Yellow Mustard Powder
  • 1 Tsp Pumpkin Spice
  • 5 Tbsp Water
  • 1 Tsp Extra Virgin Olive Oil

Instructions

  1. Place sauce ingredients in blender.

  2. Blend until smooth.

  3. Pour over zucchini (or other vegetables of choice) noodles.
